What are the advantages of a peel paddle compared to a traditional pizza peel?
A peel paddle makes loading the oven much easier because it releases the pizza by dropping it rather than sliding it with traction, which prevents the pizza from being distorted and also lets you load multiple products at once (e.g., mini pizzas, sandwiches, saltimbocca..).
What is the difference between the Vesuvius peel and the Vesuvius Evolution peel?
The Vesuvius Evolution peel is the updated version of the original Vesuvius peel: the previous model has been completely redesigned with several improvements. First, the Vesuvius Evolution features a new protective guard that prevents the fabric sheet from coming into contact with the hearth, while also letting you load pizza directly using the peel. For the same dimensions, it is 20% lighter than the original Vesuvius peel, has a new, more durable fabric sheet with better non-stick properties, and the sheet is no longer attached with clip locks but secured with screws.
What is the difference between the brown and black Teflon fabric sheets?
Both sheets are made from the same material (Teflon): they are heat-resistant, non-stick, washable, and certified for food contact. The black sheet is slightly thicker, making it more durable, and it is also a next-generation product with improved non-stick performance.
Where should I position the pizza on the peel?
We recommend always placing the pizza on the front tip of the peel, so you can set it as close as possible to the back of the oven.
Can the fabric sheet be replaced?
Absolutely, there is a video on the Instructions page that explains how to install a new fabric sheet.
How long does a Teflon fabric sheet last?
A Teflon fabric sheet has a long service life, though this depends on how frequently it is used and, most importantly, on proper care and usage.
Do I need to use semolina on the fabric sheet to prevent the pizza from sticking?
Our fabric sheets are highly non-stick, so if your dough is properly dusted with flour, you will not need to use semolina or dusting flour on the sheet. We recommend only dusting the sheet lightly with flour on your first use, and a minimal amount may be needed for high-hydration doughs.
Won't the fabric sheet burn at temperatures close to 500 degrees?
Our peels (Vesuvius and Vesuvius Evolution) come with specialized protective guards that prevent the fabric sheet from coming into contact with the oven hearth. Additionally, Teflon is a heat-resistant material, so during the short time needed to load the oven, there is no risk of damaging the fabric sheet.
